I don’t know why I try cooking sometimes. MDPC refuses to even try it. I think that he thinks I am a disaster when it comes to cooking. I would never post a recipe on here that wasn’t edible or highly rated. Your comments are appreciated on any of the recipes I post.

  • 2 cooked chicken breasts (I grilled it and seasoned with black pepper, sea salt and lime.)
  • 1 tablespoon butter
  • 1/4 cup chopped green onions
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon cummin
  • 1 can diced green chiles
  • 1 can Embasa brand Salsa Verde
  • 1 can Cream of Chicken Soup
  • 3/4 cup water
  • 1/4 cup sour cream
  • 1 cup shredded cheese (I like to mix monterey jack and cheddar)
  • 6 small flour tortillas

Preheat oven to 375 degrees. Lightly grease baking dish with butter. With remaining butter place in sauce pan with green chilies, cook in sauce pan on low heat, Open can of soup, cut up chicken breasts and add to soup mixture in a sauce pan, ad spices, sour cream, green chillies, gradually ad water. cook until it is the consistency of gravy, ad more water if needed. Spoon the chunky part of chicken and place in the middle of each tortilla, add grated cheese and roll up.  Place in baking dish with seam side down. With remaining sauce in sauce pan ad the can of salsa verde, pour on top of rolled tortillas and remaining cheese. Cook in the oven until cheese is lightly brown for 20-25 minutes. Serve with chips and salsa, garnish with sour cream.
