This is a favorite recipe that is great for parties and is very quick and easy to make.
- 1 (14 ounce) can artichoke hearts, drained and chopped
- 1 (4 ounce) can diced Green Chiles
- 1 (4 ounce) can sliced Jalapenos, drained
- 1 (4 ounce) can chopped black olives, drained
- 1/4 cup grated Mozzarella Cheese
- 1/4 cup fresh grated Parmesan Cheese
- 1/2 cup Mayonnaise
Preheat oven to 375 degrees. Open can of artichoke hearts, drain juice, chop up in smaller pieces, place in a 2 Qt baking dish. Drain the rest of the canned ingredients chiles, jalepenos, olives, add to baking dish and mix together with mayonnaise. Add Cheese to top of mixture. Bake for appoximately 20 minutes until cheese is melted and lightly brown. Serve with tortilla chips.

What’s up with Twitter?

I am a relatively new blogger to twitter. Since I joined just over a month ago, I made many new friends on twitter and have found that it provides me with good traffic to my website. The last two weeks I have noticed some little buggy problems. When you do a search for new people, this hasn’t been working. Yesterday I wanted to extend an invitation to some of my fiends to use twitter. Today I have not even been able to log in. For something that is so good in linking people together, these problems should be fixed very quickly before a competitor comes along and takes over everything they are doing. Hope these issues get resolved soon before the problem snowballs.

I made this recipe this past week. It was a winner and was very easy to make. With this recipe, it gives the option of using rice or pasta. I made this with pasta.
- 1 pound Ground Beef
- 1/4 cup chopped Sweet Onion
- 6 medium sized Mushrooms
- 1 tablespoon Butter
- 1 package Mushroom or Brown Gravy
- 1 cup Water
- 1/2 cup Sour Cream
In a sauce pan cook beef, onions, mushrooms. When almost done, add butter, water and gravy package. Cook on medium low heat, constantly stir until thickened, add sour cream and remove from heat. Serve Gravy over noodles or rice.

Some Days Just Don’t go as Planned…

There are some days that no matter how hard you try just don’t go as planned. I had my day all planned out on my to do list. Some of the things on my to do list required internet usage. It started this morning when I was about to trade some of my stocks that have been sitting idle in my 401K. I wanted to trade them up to be more aggressive. Turned out the stock I was looking at was a good winner today. But I didn’t get to do what I wanted when I wanted to because my internet went down. So I go to the next thing on my list. Had to go grocery shopping to pick up a few things at the store. I guess my mind was somewhere else because before I knew it I looked and saw flashing lights in my rear view mirror. I couldn’t believe I got a speeding ticket. My very first one. My perfect driving record is now ruined.
I proceeded to go to the store and get some things on my list. Then I stopped by the Red Box to pick up a movie I had placed on reserve earlier only to find that the movie wouldn’t come out, and the Red Box seemed to be out of order. So then, home I go. No matter how hard I tried things just didn’t work out as I planned today. There will allways be a new day a do over to make things right. Today is not one I would want to do over. For now I am going to turn up some music to cheer myself up and take a bubble bath.

Yesterday I tried a new recipe with great success, I finally made something MDPC likes. This recipe is easy to make.
- 2 chicken breasts
- 1/8 teaspoon garlic powder
- 1 teaspoon parsley
- Salt and Pepper
- 4 tablespoons olive oil
- 6-8 mushrooms sliced
- 1/4 cup Marsala Wine (red cooking wine can be substituted)
- 1 tablespoon butter
- 1 package mushroom or brown gravy
- 3/4 cups water
- 1/2 cup heavy cream
Preheat oven to 375 degrees. Season chicken with a dry rub, salt and pepper, garlic powder, parsley. Coat both sides of chicken and place in baking dish with olive oil in the bottom. Slice mushrooms and place around chicken. Cover with aluminum foil and bake for 20 minutes then turn chicken over and bake another 20 minutes (time may need to be adjusted if you are using frozen chicken.
For the gravy you will use the juice from the chicken. In a sauce pan add Marsala Wine, butter, cook until it simmers and reduces to half, remove from heat. When chicken is almost done, pour all juices and mushrooms into sauce pan, add water and gravy package. Cook on medium low heat, constantly stir until thickened, ad cream and remove from heat. Serve Gravy over chicken and mashed potatoes or whole baby red potatoes.
